Did you know that Chocolate from Bayonne is directly related to the Spehardic Jews? During the 17th century, Bayonne became a refuge for many jews who fled Spain and Portugal from the Spanish inquisition. Many jews brought to Bayonne their culture and knowledge of food. This includes the Jewish tradition of preparing chocolate with cinnamon and vanilla, served hot. The chocolate sellers extended these recipes throughout the whole of Europe. Still to this day, these recipes are well known and used by La Chocolateríe Cazenave (1854). Here they serve their famous “chocolat à l’ancienne”.
